A Go-To “Super” Food That Kids Love!

If you’re a busy parent looking for ways to incorporate more vegetables into your child’s diet (and if it’s in a sneaky way, no judgement), this recipe is one of our favorites! 

As someone who works in the world of branding/marketing AND as the mom of young children, I need to be creative in my approach to food presentation. Behold: Hulk Pancakes. They’re green. They’ve got protein. They don’t require any additional sweetener (at least at our house). My kids ask for them by name and gobble them up faster than I can make them.. and I hope that you have a similar experience if you try this recipe at home. I usually make at least a double batch because they also do well as leftovers. Below are a few recipe variations!

Gluten-free/vegan-friendly recipe: 

  • 1 cup oatmeal (I use rolled oats)
  • 1 large overripe banana
  • handful of baby spinach
  • large spoonful of peanut butter
  • milk alternative (almond, oat, etc.); enough liquid to cover oats in the blender or until mixture is a pourable pancake batter consistency
  • optional: add some maple syrup or chocolate chips for sweetness

Blend all ingredients in a Vitamix or food processor, then cook at 300-350°F on a griddle or pan. A traditional blender can work for this, but the oatmeal doesn’t blend quite as well. 

Non-vegan recipe alternatives:

  • add an egg for additional protein
  • use regular milk
  • substitute oatmeal with another pancake mix (read the box for more specific quantities).
    I like Kodiak protein pancake mix, that only requires water.
